Traffic is part of the timeline
A 5 pm delivery to Opa-locka and a 5 pm delivery to MIA are different orders. We time cooking backwards from wheels-up with the drive built in, and we tell you the realistic handoff window rather than the optimistic one.
Long-haul legs change the menu
South America and transatlantic departures out of Miami need food that holds. We shift toward dishes that re-therm well, keep raw preparations and delicate garnishes separate, and pack a second service where the leg justifies it.
Local sourcing, actually local
Stone crab in season, Florida snapper and grouper, tropical fruit that's ripe rather than shipped green, Cuban coffee done properly. Menus reference Miami because the ingredients do.
Dietary requests get handled at brief time
Kosher-style, halal requests, vegan, gluten-free and allergen-critical orders are confirmed when the menu is written, not discovered at packing. Ingredient and allergen statements travel with the delivery. We do not hold kosher or halal certification.

The busiest private-aviation field in the region and our shortest reliable run. Best candidate for genuinely short-notice orders.
TMB
Miami Executive (Kendall-Tamiami)
Quieter south-Dade field, common for light and midsize aircraft. Add drive time from the kitchen when planning a tight turn.
MPB
Miami Seaplane Base
Compact operation with limited storage. We pack smaller, sealed units suited to short legs and constrained cabins.
FBO and aircraft-side delivery depends on facility access and coordination with the FBO or handling agent. We confirm the handoff point with you before the order goes out.
Timing and ordering.
01Send the brief: departure date, wheels-up time, airport and FBO, tail number, passenger count and a phone number. That's enough to start.
02We reply with what's realistic for the window, the menu, and the price — usually within the hour, any time of day.
03Standard turnaround is 2–4 hours from confirmed menu to aircraft, subject to availability. Caviar service, multi-course tasting menus and large passenger counts use the full window or more.
04Delivery is temperature-conscious and sealed, with passenger and course labeling plus reheating and plating notes for the cabin attendant.
