In high season we ask for as much notice as you can give on PBI departures — not because the kitchen is slower, but because the road and the ramp are. Off-season, short-notice orders here behave much like Miami.

Palm Beach is the most seasonal market we serve and the least forgiving on timing. From December through April the ramps fill, the fields run tight, and the drive north from the kitchen is the single biggest variable in your delivery window. We plan around it rather than pretending it isn't there.

Drive time is the real constraint
Palm Beach is our longest regular run. We time cooking so food finishes closer to departure and travels less, and we pack with a wider temperature margin than we'd use for an Opa-locka drop.
Households with standing preferences
Many Palm Beach principals fly the same menu repeatedly. We keep preferences on file — the coffee, the bread, the dish that always comes back untouched — so the second order takes one message instead of a full brief.
Formal service expectations
Palm Beach cabins tend to be served properly, course by course. Labeling here is more detailed: sequence, plating notes, garnish placement, and what should never be reheated.

Fort Lauderdale Executive
Frequently used by Palm Beach-based passengers departing south. Included on the same run when itineraries split across counties.
FBO and aircraft-side delivery depends on facility access and coordination with the FBO or handling agent. We confirm the handoff point with you before the order goes out.
Timing and ordering.
- 01Send the brief with departure date, wheels-up time, airport and FBO. In season, earlier is materially better here than anywhere else we serve.
- 02We confirm the menu and a realistic delivery window that accounts for the drive north.
- 032–4 hour standard turn from confirmed menu, subject to availability. Peak-season PBI orders may need a longer window and we'll say so up front.
- 04Sealed, temperature-conscious delivery with passenger and course labeling plus detailed plating and reheating notes.
